ToyViewer - A simple, free image editor. I use it all the time to crop and resize pictures for uploading to Trade Me auctions.
VisualHub - Brilliant, simple, cheap video converter. Select just about any format video file, pick output option (including burning directly to DVD), click Start.

That's two. Hmm, everything else has either already been mentioned, or comes with a new Mac.
