I've got:

VLC
NcFTP - command line FTP
MySQL
OpenOffice 2
Vegastrike - gotta waste time somehow
Text Wrangler
PearLyrics - still have it before music industry decided to be tossers
DivX 6 plugin
3iVX plugin
Fink
XCode 2.x
Firefox
Thunderbird

That's more than 10 but then I use more than 10 apps.

As far as free apps go, I get the most use out of Firefox, Thunderbird, Taco HTML Edit (it's better for batch edits than GoLive... go figure), VLC, Genesis Plus and SNES9X.

Here's my 2c worth...
(Some are must haves for new users, others I have picked up on as I went...)
Note: This list does not include the Apple installed Safari, Mail, QuickTime etc, or the essential iLife and iWork suites...

*** Top 10 (not in any particular order)
FruitMenu (or at the very least 'FinderPop', which is now in OS X)
Synergy
GraphicConverter
MS Word
Tex-Edit +
PhotoShop Elements 3
Toast (7)
Imagewell
VLC
SoundStudio

*** Runners up... (Yeah, I'm cheating!
Monica
Interarchy
NVU (I can't afford 'Go Live'
MacTracker
Audio HiJack

*** For relaxation...
Snood
Myst (1 to 5) I just picked up Myst V, so haven't even put the disk in the drive yet!

Darn... I forgot DragThing as a launcher and Switchback for backup...

Nice lists and programs from others. Thx for the ideas!

My top ten (in no particular order):

- Adobe Creative Suite Premium (for image editing, web design etc)
- Stuffit Deluxe 10 (for compression)
- Google Earth (for fun, I mean research)
- iFill (for filling up your iPod with internet radio)
- disclabel (so you can tell what is actually on all those CDs and DVDs)
- Transmit (great FTP client)
- Interarchy (another great FTP client)
- Temperature Monitor (to make sure your Mac isn't cooking itself)
- HandBrake (for ripping your, cough, homemade movies)
- iView MediaPro 3 (good for cataloging photos, unlike iPhoto and Aperture which shift your files everywhere)

That's ten and I didn't even mention VLC, Pages, Toast Titanium or Image Tricks...
