How do I make the clock display say for example:

DD/Month - HH:mm AM/PM

there is no function for me to format it like this except I got only Wed 5.42 PM

a bit boring I must say so how do we make it a bit better.

I've used both and changed to the latter a while back as it seemed more stable and flexible. Usually, that's all I use iStat menus for, but it actually does a heck of a lot more stuff.
